Stuffed dates

These delicious stuffed dates are the ultimate no-fuss sweet snack—naturally sweet, nutrient-dense, and made in minutes. Opt for these over processed treats to curb sugar cravings while fuelling up on slow-burning energy, healthy fats, and fibre.

Ingredients

  • 10 pitted Medjool dates (the soft, juicy kind)

  • 3–5 tsp peanut butter (or any nut butter you like)

  • 100g good quality dark chocolate (85%+ cacao recommended)

  • Chopped nuts (pistachios or hazelnuts work beautifully)

Method

Step 1

Slice each date down one side lengthwise to create a pocket.

Step 2

Stuff each date with peanut butter (about 1/2 - 1 tsp). Gently press the butter in and squeeze the date closed.

Step 3

Set up a bain-marie (a bowl over a pot of simmering water). Add the chocolate to the bowl and stir until fully melted. Once melted, turn off the heat.

Step 4

Hold each stuffed date by both ends and dip the open/stuffed side into the melted chocolate, just enough to seal in the peanut butter and coat the exposed area.

Step 5

Place the dipped dates on a rack or plate to cool. Before the chocolate sets, sprinkle with chopped nuts.

Step 6

Once cooled, store in the fridge. They’ll keep for up to 5 days—if they last that long.
