Apple and cinnamon seeded crackers
These naturally sweet seeded crackers are one of my go-to options when you want something crunchy and a little bit sweet, but still satisfying. They’re simple to make, made with just a few ingredients, and have that lovely balance of sweetness and crunch that actually hits the spot.
The apples bring the sweetness, while the seeds bring fibre, healthy fats and a bit more substance — so they’re not just a quick sugar hit, but something a little more sustaining.
Serves: Makes 1 tray
Time: 40–45 minutes, plus cooling time
Ingredients
2 medium apples, peeled and chopped
250g mixed seeds, such as pumpkin, sunflower, flaxseed and sesame
¼ tsp cinnamon
100ml of water
1 tsp honey (optional)
Method
Step 1
Preheat the oven to 175°C. Line a baking tray with baking paper.
Step 2
Add the peeled and chopped apples to a pan with the cinnamon and water (add water as needed to loosen the apples and prevent them from burning). Cook gently until softened and broken down. You can blend the mixture for a smoother texture (the apple adds sweetness and helps bind your seeds).
Step 3
Stir through the mixed seeds until you have a thick, sticky mixture. Add the honey for extra sweetness.
Step 4
Spread the mixture onto the lined baking tray. Cover with another sheet of baking paper and press into a thin, even layer.
Step 5
Bake for around 30 minutes, or until it’s starting to firm up (it should still be a little pliable while warm).
Step 6
Allow to cool completely before breaking into crackers. Store in an airtight container once fully cooled. Feeling fancy? Drizzle with melted dark chocolate.
